In the Kitchen

It seems it has been awhile since I have posted any cooking posts.  I guess maybe it is because I have been lacking inspiration in the kitchen lately.  We have been grilling a lot since it is easy, fast, and does not heat up the house.  I grabbed this cookbook at the library recently, The Stocked Kitchen, and I really like the concept of the whole book.

They give a standard grocery list in the back of the book to stock your kitchen.  Each week you are supposed to make sure you have the items on hand, then you are set to make any recipe in the whole book.  Most of the items on the list are items that I normally buy.  The authors make a good point that many recipes have you buy specialty items that you will only use for that recipe.  In this book, they only have you buy ingredients that can be used in a variety of recipes.  Also, their theory is that if your kitchen is stocked with these ingredients you should always be able to make "fast food" ie sloppy joes, pancakes, etc.  And, that you should be able to entertain on a whim.

I've only made the enchiladas thus far, but they were hit with the family.  I did make "tacos" for the girls leaving off the enchilada sauce for them, but they actually gobbled them up.

What are you cooking up these days?
