Less is More



I'm kind of beside myself without my camera this week.  One of my dear children (Names shall remain anonymous here. Ahem.) climbed up on a chair and pulled it out of the cupboard.  Then, apparently, it dropped because now the lens will not open and close.  *Sigh*... I DO have a plan for a replacement, so fear not!  I will be photographing the children again soon.          

This week since I've been without my camera I have not had inspiration to blog, and I also deactivated my facebook account.  Isn't crazy how a good thing can end up taking up WAY too much of your time.  Well, it did for me, and I had to sign off for awhile.  It's too easy to slip away and then pretty soon you've lost a lot of time that could of been spent on something more productive.  Instead of zoning out on the computer during my small allotments of free time I have been reading:
The Midwife  by Gay Courter.  

Trying to squeeze in some exercise by watching this video: Gabrielle Reeces' Video.  Usually surrounded by my three children, so you can imagine how productive this really ends up being...

Baking:
Pumpkin Muffins adapted from Soulemama.  *I used canola oil instead of coconut oil, and flax seed meal instead of eggs.
Sandwich bread adapted from King Arthur Flour.  *I used Soy milk instead of cow's milk.
I decided to try something new since Mary Elizabeth started to say about the 100 percent whole wheat recipe that I made, "I hope you're not putting that crumbly bread in my lunch that you made."


Also, I've been trying to do better about stretching our meals and waiting longer to go to the grocery store.  It's amazing how much more creative I am when it would seem that we're out of food.  I can say, hmmm, well, I have a can of tuna, canned tomatoes, and spaghetti noodles.  There's a dinner right there!  And when we're out of cereal- we still have oatmeal.  It's quite sad how we (I say "we" loosely because I know not everyone is like me and my family) start to think we don't have any food in the cupboard, when we DO.  I've really been convicted about how many people do not have a pantry or cupboard to go to and they really DO NOT have any meals.  Especially during this holiday season it's really hitting home that many families won't have a big Thanksgiving meal.  I know many of us are feeling the strain of the economy right now and are looking for ways to save money.  I'm also realizing how much our family relies on bread, crackers/snacks, and cereal.  I'm tempted to not buy any of those things this week and only bake bread.  It's much easier to say, sorry, all we have is oatmeal for breakfast.  This might sound extreme, but if you knew my girls' eating habits you would agree that something has to change.  The idea of narrowing down their choices by buying less really is a win-win for our finances and their health.  How are you winning in this battle of spending less and getting your kids to eat healthier?
